the freude story

The youngest of five, I was born to marzipan-loving parents on a British army base in Bünde, Germany. I grew up scoffing gummy dummies from the local sweet van and cultivating a taste for moreish Deutsche bakes.

Warm, gingery Lebkuchen, cloud-like Berliner donuts and deep, dark Black Forest Torte were my earliest baking influences and lifelong favourites. Today, besides beautiful birthday cakes and celebration bakes, my signature creation is the deeply indulgent Käse-Sahne Torte, which I now conjure up from my little pocket of Long Eaton in Nottingham.

I bake to make people happy. Pure and simple. But I know that spreading the freude is about so much more than sharing the cake. That’s why I strive to source ethical, sustainable ingredients, as locally as possible, supporting other independents along the way. And I’m always looking for more ways to support charities, community causes and those less lucky in life.
